Slow Cooker Mexican Chicken

It only takes six ingredients to make this tender, mildly spicy chicken you’ll want to eat all week long.

Ingredients

Scale

2 lbs. chicken thighs

1 tsp salt

1 tsp pepper

2 cups of your favorite salsa

1/2 cup fresh cilantro

Spanish Rice – follow directions on package

1 16 oz can black bean

1/2 onion

1 chopped green bell pepper

Instructions

Place chicken in your slow cooker. I was in such a hurry, I used frozen chicken.

Add your favorite salsa to the chicken

Add salt and pepper to taste

Let cook on high for 3.5- 4 hours.

Shred chicken. (optional)

Add 1/2 cup fresh cilantro

Add cooked rice

To make the beans, sautee the onions and bell peppers until translucent then add beans.

Plate with beans on the bottom and chicken and salsa on top!
