Shaved Brussels Sprout Salad with Cherries and Walnuts

This salad is a crisp, tangy celebration of texture and flavor. 4 cups shaved Brussels sprouts

¼ cup extra-virgin olive oil, plus more for drizzling

¼ cup fresh lemon juice

½ cup walnuts, toasted

⅓ cup dried cherries or blueberries

⅓ cup grated pecorino cheese, optional

⅓ cup chopped chives

Sea salt and freshly ground black pepper

Champagne Vinaigrette

1 clove garlic

¼ cup champagne vinegar

1 tablespoon Dijon mustard

1 tablespoon honey

1 teaspoon fresh lemon juice

½ teaspoon salt

Freshly ground black pepper, to taste

½ cup extra-virgin olive oil

Instructions

Champagne Vinaigrette

Chop garlic until finely minced. Add the champagne vinegar, Dijon mustard, honey, lemon juice, salt, and pepper, and add all of the ingredients to a jar with a tight-fitting lid, and shake thoroughly until emulsified.

Salad

Thinly slice the Brussels sprouts using a mandoline or food processor on slice if you have one. Place them into a medium bowl and toss with the olive oil, lemon juice, walnuts, cherries or blueberries or both, pecorino cheese, chives, and pinches of salt and pepper.

Let the salad sit at room temperature for 15 minutes, then taste and adjust the seasonings. Finish with an additional drizzle of olive oil if you like. This salad is also VERY good the next day!
