Roasted Chickpeas

Here is why I love roasted chickpeas:

Roasted chickpeas are a fantastic source of plant-based protein, making them an ideal choice for vegans, vegetarians, and individuals looking to reduce their meat consumption. With approximately 15 grams of protein per 1-cup serving, roasted chickpeas can contribute significantly to your daily protein requirements. Protein is essential for building and repairing tissues, supporting muscle growth, and maintaining a healthy immune system. In addition, fiber is crucial in maintaining good digestive health and promoting feelings of fullness. Roasted chickpeas are an excellent source of dietary fiber, with approximately 12 grams per 1-cup serving. Consuming adequate fiber can help regulate bowel movements, prevent constipation, and support a healthy gut microbiome. Additionally, a high-fiber diet has been linked to a reduced risk of chronic diseases such as heart disease, diabetes, and certain types of cancer.

Ingredients

2 cups canned chickpeas (garbanzo beans), drained and rinsed

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

Optional: additional spices or herbs of your choice (such as chili powder, cayenne pepper, curry powder, or dried herbs)

Instructions

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or aluminum foil.

Drain and rinse the chickpeas well, then spread them on a clean kitchen towel and gently pat them dry. Removing excess moisture will help the chickpeas become crispier during roasting.

In a mixing bowl, combine the olive oil, cumin, paprika, garlic powder, salt, pepper, and any additional spices or herbs you desire. Stir well to create a flavorful seasoning mixture.

Add the dried chickpeas to the bowl with the seasoning mixture and toss until they are evenly coated.

Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Make sure they have some space between them to allow for even roasting.

Place the baking sheet in the preheated oven and roast for about 25-30 minutes, or until the chickpeas turn golden brown and crispy. You can give the baking sheet a gentle shake or stir the chickpeas halfway through to ensure they roast evenly.

Once the chickpeas are done, remove them from the oven and let them cool on the baking sheet for a few minutes.

Serve the roasted chickpeas as a crunchy snack or use them as a topping for salads, soups, or grain bowls. They can be enjoyed warm or at room temperature.
