Pico de Gallo

I love a pico de gallo and make it about once a week. It is a fresh and flavorful salsa made with chopped tomatoes, onions, jalapeño peppers, cilantro, and lime juice. It’s a staple in my house and can be used as a topping or a side dish for various dishes, such as tacos, burritos, grilled meats, and snacks.

Rich in vitamins and minerals: Pico de gallo is a nutrient-dense food that provides a variety of vitamins and minerals, including vitamins A, C, and K, potassium, and folate. These nutrients are essential for maintaining a healthy immune system, vision, bone health, and more.

Low in calories: Pico de gallo is a low-calorie food that can help with weight management. It’s made primarily of fresh vegetables and contains no added sugars or fats, making it a healthy alternative to high-calorie dips and sauces.

Contains antioxidants: Tomatoes and cilantro, two key ingredients in pico de gallo, are rich in antioxidants that protect cells from damage caused by free radicals. Antioxidants have been linked to a reduced risk of chronic diseases like cancer and heart disease.

May improve digestion: The fiber content in pico de gallo, combined with the probiotics found in fermented foods like salsa, may improve digestion and gut health. Eating fiber-rich foods can also help regulate blood sugar levels.

May reduce inflammation: Jalapeño peppers contain capsaicin, a compound known to have anti-inflammatory properties. Consuming capsaicin-rich foods like pico de gallo may help reduce inflammation and alleviate symptoms of arthritis and asthma.

Ingredients

Scale

Six tomatoes

Three jalapeño

One medium white onion

½ a medium red onion

1 cup cilantro

Six cloves garlic

Three limes juice

1 tbsp cumin

1 tsp sea salt

1 tsp chili powder

Optional/Seasonal:

You can add any fruit you like. For example, I have added mango, pineapple, raspberries, blueberries, strawberries, pomegranates, and peaches.

Instructions

If I have the time, I will chop everything by hand, but if I am short on time, a food processor comes in handy!

A pulse or two in the food processor will be perfect if you like it a little less chunky.
