Mediterranean Chickpea Salad

Chickpeas, also known as the garbanzo bean, are classified as legumes. However, chickpeas are considered a vegetable and a protein. Chickpeas are loaded with vitamins and minerals. These include choline, which helps your brain and nervous system run smoothly, as well as folate, magnesium, potassium, and iron. Chickpeas are also high in vitamin A, E, and C. These tiny peas are just packed with nutrition. I consider them a superfood.

Ingredients

Tomatoes – Use any type of tomato, I prefer cherry or grape tomatoes, about 1/2 cup diced or sliced

1 English cucumber, diced

1 medium avocado, chopped

1 (15-ounce) can of chickpeas, drained and rinsed

Dressing:

1/4 cup extra-virgin olive oil

1/2 tsp lemon zest

1/8 tsp black pepper

1/4 tsp salt

1 minced garlic clove

1 Tbsp + 1 tsp fresh lemon juice

Instructions

Combine the dressing ingredients in a small bowl: 3 Tbsp olive oil, 3 Tbsp lemon juice, 1 minced garlic clove, 1/2 tsp salt, and 1/8 tsp pepper, and whisk to combine (or shake them together in a small mason jar).

Combine remaining chickpea salad ingredients in a salad bowl, add dressing to taste, and toss to coat.
