I love a good lemon vinaigrette. You can use this on salads, vegetables, fish, or marinate chicken in the dressing.

Throw out your bottles of salad dressings, they are full of preservatives and ingredients we can’t pronounce. But take 5 minutes to make a simple vinaigrette. It’s healthy, and you know all of the ingredients.

Ingredients

Scale

1/2 cup lemon juice

3/4 cup extra-virgin olive oil

1 medium shallot, minced

1 Tbsp minced fresh thyme leaves

2 Tbsp minced fresh basil leaves

2 teaspoons minced fresh oregano leaves

1teaspoon Dijon mustard

Salt and freshly ground black pepper

Instructions

Whisk all of the ingredients together.

This will save in the refrigerator up to 2 weeks.
