Grandma’s Famous Banana Bread

My grandmother gave me my first St. Olaf’s Lutheran Church Cookbook when I was seven years old. I felt so grown up; I couldn’t wait to make my first recipe. I decided to make my grandmother’s banana bread recipe. It is so good that I have passed this recipe on to many of my closest friends.

Ingredients

  • 1 Stick (½ Cup) Butter
  • 3 Large Ripe Bananas, (medium or large)
  • 2 Large Eggs
  • 1 teaspoon Vanilla Extract
  • 2 Cups All Purpose Flour
  • 1 Cup Granulated Sugar
  • One teaspoon of Baking Soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 cup of chopped walnuts

Instructions

  • Preheat oven to 350 degrees.
  •  Grease a loaf pan with butter and set aside.
  • Add the stick of butter to a large bowl and microwave for 45 seconds or until melted.
  • Add the bananas to the same bowl and mash with a fork; it will look chunky.
  • Add the vanilla extract and egg to the bowl and use the same fork to mash and stir until no yellow streaks of egg remain.
  • Whisk together the flour, sugar, baking soda, salt, and cinnamon in a second large bowl.
  • Add the dry ingredients to the wet ingredients and mix with a spatula until combined.
  • Chop walnuts and add to the mixture.
  • Pour the batter into the prepared loaf pan and bake for 55 minutes until a toothpick inserted in the center of the bread comes out clean. ( In my oven, it takes 60 minutes, so be sure to test for doneness with a toothpick)

This is the original recipe, but throughout the years, I have added the following options: you can be very creative with this recipe!
