Our family loves this soup. It is great served with a kale salad and a baguette.
EVOO
One small onion
Two carrots
Four cloves garlic
32 0z of chicken broth (of course, you can use vegetable broth as well)
One package of tortellini ( we prefer the four cheese blend)
1 cup fresh spinach
salt
pepper
Chop onion garlic, and slice carrots into bite-size coins.
In a saute pan, add EVOO, turn on medium heat.
Add onion, garlic, and carrots, cook for 5 minutes.
In a stockpot, add the chicken broth, add the sauteed vegetables above, let it come to a simmer. Next, add the tortellini and cook according to the tortellini instructions. In the last 5 minutes, add fresh spinach. Add salt and pepper to taste.
This feeds approximately four people, you can easily double this recipe.
