Carrots are a particularly good source of beta carotene, fiber, vitamin K1, potassium, and antioxidants. They also have several health benefits. They’re a weight-loss-friendly food linked to lower cholesterol levels and improved eye health. Everyone loves these!

These carrot chips are great served with cottage cheese or ranch dressing. Use them on top of salads instead of croutons.

Ingredients

Scale

1 lb. carrots

Drizzle of Olive oil

Sea salt and pepper to taste

Instructions

Peel carrots into thick chips.

Toss with olive oil, sea salt, and pepper.

Bake at 350* for 12 minutes.
