Baked Zucchini Fries

These baked zucchini fries are so good you would think they are fried, but they are not, they are baked!

2 medium zucchini

1 egg

1 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp dried oregano

1 tsp dried basil

Lemon Parsley Aioli

1/2 cup mayonnaise

1 lemon, juiced

1 garlic clove, minced

1 tbsp finely chopped parsley

Salt and pepper to taste


  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Line two baking sheets with parchment paper.
  3. Slice the zucchini in quarters.
  4. Crack the egg in a small bowl and lightly beat it.
  5. Add the parmesan cheese and spices to another bowl and stir to combine.
  6. Dip a zucchini slice in the egg wash and then into the Parmesan bowl.
  7. Gently shake off any excess and transfer to the baking sheet.
  8. Repeat this process until all zucchini slices are coated.
  9. Bake for 25-30 minutes, flipping halfway through to ensure both sides are cooked.
  10. Make the lemon parsley aioli in another bowl
  11. Serve immediately.
