Baked Zucchini Fries

These baked zucchini fries are so good you would think they are fried, but they are not, they are baked!

Ingredients

2 medium zucchini
1 egg
1 cup grated Parmesan cheese
1 tsp garlic powder
1 tsp dried oregano
1 tsp dried basil
Lemon Parsley Aioli
1/2 cup mayonnaise
1 lemon, juiced
1 garlic clove, minced
1 tbsp finely chopped parsley
Salt and pepper to taste
Instructions
- Preheat the oven to 425 degrees Fahrenheit.
- Line two baking sheets with parchment paper.
- Slice the zucchini in quarters.
- Crack the egg in a small bowl and lightly beat it.
- Add the parmesan cheese and spices to another bowl and stir to combine.
- Dip a zucchini slice in the egg wash and then into the Parmesan bowl.
- Gently shake off any excess and transfer to the baking sheet.
- Repeat this process until all zucchini slices are coated.
- Bake for 25-30 minutes, flipping halfway through to ensure both sides are cooked.
- Make the lemon parsley aioli in another bowl
- Serve immediately.
